Fluffy Banana Cupcake



All along, I've never been able to find any bakery stuffs with banana that suits the taste of my mum and me.
We are not exactly too picky.
But we find the taste of banana cakes especially at bakeries either too moist, too sweet or just too "fragrance"
(And I mean fragrance from too much vanilla or banana essence..totally no banana fragrance)



In the area of baking, I'm still very novice.
Comparing with the tons of bloggers, I'm totally way under.

But I must say, I'm especially proud of this normal looking banana cupcake.
(oops...sounded too stuck up...haha)
It is the creation under "unexpected circumstances".
The original of this recipe is actually just..normal cupcakes.
Thru trial and error, we came up with cupcakes similar to "molten lava" chocolate cakes and thru fine tuning, we arrived with the final version of Just.G banana cupcake.



























Do not judge its book by it cover.
It doesn't look any tasty and erm, nice, but it doesn't mean it is a bad quality product.
It carries the super fluffy texture, not too oily neither too sweet.
Fragrance of banana is uncoverable.
Of cuz, we are generous with the amount of banana that we put in.
Adding final touches with some vanilla essence to bring the fragrant more.

I'm not selfish, so here the recipe to try out...


250g     self-raising flour
1tsp      baking soda
200g     butter/margarine
220g     sugar
4           eggs
4           bananas mashed
1/2tsp   vanilla essence



1) Leave butter in room temperature for 1hr
2) Adding in sugar and beat till frothy
3) Slowly adding egg 1 at a time and mixed well before adding the next one
4) Add in the flour(s)
5) Pop in the vanilla essence
6) Throw in all the mashed banana
7) Give about 12 on the big muffin tray
8) Bake at preheat 150c for 20-25mins
9) Check with a stick and it should come out clean or the colour should be golden



Well, not much stuffs required, and neither is it too complicated.

Note:
#1 Reduce sugar to the amount you wish if you prefer less sweet
#2 Bananas have to be real ripe before use
#3 If you find your mixture becoming tofu texture after adding egg, add in some flour
#4 Baking time and temperature is oven independent, therefore do try out with your oven to make sure the time and temperature is ok
