Ok, I'm too generous on the filling and too stingy on the skin...
I half the skin recipe and therefore ended with big sized pineapple tarts...
Feedbacks were a little too "melty"...
And over sweet for some as the pineapple used were a little too ripe...
And the filling was a little too sticky...
Think it wasn't dry enough yet...
While this met-in-mouth recipe is quite good if I thicken the skin and lessen the filling, next round will be open-faced pineapple tarts instead..
